In summer, herds move up to the flower-filled fields of the high mountains and eat their fill of fragrant grasses. As soon as the first snow begins to fall, the herds make their way down the mountain, continuing the milking and cheesemaking process as they go. September marks the precise moment when that transition begins, and the milk it produces is exceptional.

1. Vacherin Mont-d’Or PDO, France and the Jura foothills

Alpine cheeses such as Mont-d’Or reach top perfection after being produced from around September, when the Montbéliarde cows have come down from their summer alpine pastures, producing less but far richer milk. Mont-d’Or is only made between mid-August and early March with the rich, cream-laden cow’s milk produced by alpine cows who have grazed all summer on mountain flowers. The fat-rich milk is not plentiful enough to make wheels of Comté, so the Vacherin cheesemakers created Mont-d’Or, a rind-washed cheese wrapped in spruce bark. Taste it at source in Pontarlier, the gateway town of the Haut-Doubs, where local fromageries sell it directly from the cellar.

2. Allgäuer Bergkäse PDO, Bavaria, Germany

Allgäuer Bergkäse PDO is a cheese made from raw cow’s milk in the German part of the Allgäu region. It was awarded the European Protected Designation of Origin in 1997. The essence of this cheese relies on fresh milk sourced from herds that graze on the high pastures of the northern foothills of the Alps. The local areas of Lindau, Oberallgäu, Ostallgäu, and Unterallgäu in the Swabian part of Bavaria, including the towns of Kaufbeuren, Kempten, and Memmingen, offer the unique environment for making this renowned cheese. September wheels, aged for at least 4 months, carry the full aromatic memory of the summer pastures.

3. Époisses PDO, Burgundy, France

Époisses PDO is a pungent but delicious cheese from the Côte-d’Or department of Burgundy. Its rind is washed in Marc de Bourgogne, and September brings its characteristic orange surface to its most intense colour and aroma. Visit the village of Époisses itself, where the family producer Berthaut has operated for generations and welcomes visitors to the cellars.

4. Langres PDO, Champagne-Ardenne, France

Hailing from the Champagne region of France, Langres cheese is a true autumn delight. Its small, round shape with a concave top is not only visually striking but also serves as a reservoir for Champagne or Marc de Bourgogne. Langres cheese is known for its vibrant orange rind, achieved through the use of annatto, and its concave dent known as the “fontaine.” The town of Langres itself, a walled medieval city in Haute-Marne, hosts local market days where farmhouse producers sell direct.

5. Manchego PDO, La Mancha, Spain

Traditionally from the La Mancha region, Manchego is a pressed cheese made from either raw or pasteurized grass-fed sheep milk. Its name comes from the breed of sheep, the Manchega. The texture is firm and buttery, with tiny air pockets. The ageing period ranges from 2 weeks up to 2 years. Depending on how old the cheese is, the flavour can vary from mild and slightly nutty with caramel and butterscotch undertones to spicy and peppery. 6. Pecorino Sardo PDO, Sardinia, Italy

By September, wheels made from spring milk have aged through the summer to a firm, slightly smoky, lanolin-rich character that is unlike any other cheese in Europe. The market town of Ordizia in Gipuzkoa hosts a weekly cheese market where local shepherds sell their own wheels directly.
